GUACAMOLE








2 avocados, coarsely mashed (if that makes sense)
1 jalapeno, minced
1 med. tomato, chopped
1 sm. red onion diced
2 garlic cloves, minced
1/2 c diced mango (optional)
cilantro (as much as you like)
kosher salt
lemon or lime juice

Mix together and serve.  Instead of the mango, you could also include roasted corn, fresh corn, or pineapple. I like to add a little extra of the ingredients that gives it a kick (especially if I put something sweet in like corn or pineapple) like the jalapenos, garlic and red onion.
